Description
If you say, “There is no distillery in Sausalito” you’d be right. The rye is sourced from Castle & Key distillery in Kentucky. The mash is 74% rye, 15% malt and 11% corn ( a mash they do not currently bottle for any one else). It was aged for about one year in Kentucky and made the journey to Northern California for a total of five years in new oak. The final six months spent time in a California style Madeira barrel from a Napa winery I can’t name. But I do know from experience it has a great picnic area and an extensive tasting room.
The rye comes in a 55% abv and will make a terrifically stiff and unique Manhattan. But also be sure to give it a shot on its own. Look for notes of red apple skin, apricot, red jolly rancher notes and caramel hard candy. With oak spice balance. You might even pick up a slightly earthy, savory, cheese rind characteristic. I am sure that comes from the Madeira barrel (also evident in dessert wine barrel finished Scotches).
